Carolyn took an Engineering degree at Imperial College, London and despite the demands of married life and rearing 3 children retained an active involvement in Insurance, Political and Environmental issues. Her dissertation through Darwin College, Cambridge titled "An investigation into the introduction and use of coal-tar derived dyes to colour food, 1856-1914" resulted in the award of Doctor of Philosophy in 2016 and a Fellowship at Clare Hall in 2017.

The University of Chicago Press published Carolyn's book 'A Rainbow Palate' in September 2020 to widespread acclaim from eminent scientific journals.

Clare Hall describes her research interests as follows:

Dr Carolyn Cobbold is a Research Fellow investigating food in the nineteenth and twentieth centuries, and the mutual interactions of science, commerce, industry, government, journalism, culture and law.  She completed a history of Science PhD at Cambridge University after an earlier career in journalism.  She has also been actively involved in community work, including being Project Lead Developer at the Manhood Peninsular Partnership, serving as a governor for a primary and secondary school, and working as a volunteer at a homeless hostel.  Dr Cobbold is a council member of the Society for the History of Alchemy and Chemistry, and was elected a Fellow of the Royal Society of Arts in 2016 for her work on climate-change mitigation and community engagement.
